Ranma 1/2 has one of the longer side-content lists in anime, mostly because the original run spun off a small mountain of OVAs and movies adapting manga chapters the 161-episode TV series never got to.
Here's the shape of it. The TV series (1989 to 1992) is the backbone and the only piece you actually need. Everything after it, the two movies, the string of OVAs, the music specials, is manga material told outside the show, some of it genuinely fun, none of it required to understand the story. A 1993 talk special even takes a break from the story entirely to look back at the series in interview form. In 2008 the original cast reunited one more time for a single OVA, over a decade after everything else on this list.
Then in 2024 the whole thing got a proper reboot: a new adaptation from the manga's beginning, done as a complete series rather than the abridged pace of the 1989 version. You don't need the original run to follow the reboot, it retells the same story from scratch with a different studio and a slower, more faithful pace.
