Haikyu!! Watch Order: Every Season, Movie, and OVA, in order
“Four seasons, five movies, and only one of those movies you actually need to watch.”
Haikyu!! is about as straightforward as sports anime watch orders get: four seasons, in order, no alternate timelines, no OVA that secretly changes everything. The only real decision point is what to do with the five movies, and that decision is easy once you know what they actually are.
Here's the shape. Season 1 through Season 4 (which Production I.G split into two cours, Part 1 and Part 2) tell one continuous story: Karasuno's volleyball club climbing from a nothing team to a real national contender, with Hinata and Kageyama's freak quick-attack partnership as the engine the whole show runs on. Watch these four in order and you have the complete Haikyu experience up through where the TV anime stopped.
Now, the movies. Four of the five (The End and the Beginning, The Winner and the Loser, Talent and Sense, Battle of Concepts) are theatrical recap compilations built from footage already in the seasons. Sports-anime fans in Japan will pay to see a big match again on a large screen, and that's a fine business, but there's nothing new in the footage. Skip all four without a second thought.
The fifth movie is the one that actually matters: The Dumpster Battle. It adapts Karasuno versus Nekoma, the rivalry the entire series has been building toward since its earliest episodes, and it's new animation covering manga chapters the TV series never got to. This one isn't optional. Watch it after Season 4 Part 2 and treat it as the real series finale, because that's what it functionally is.
Everything else scattered through the list (the Quest Picture Drama shorts, Lev Appears!, VS "Failing Marks," the Spring Tournament special, Land vs. Air, and the stop-motion OVA shorts) is pure bonus material. Charming if you love these characters, completely irrelevant to the plot.
At the end, the real watch order is short: Seasons 1 through 4, then The Dumpster Battle. The four recap movies and the assorted shorts are there if you want them, not because you need them.

a clip-based TV special, no new story.
a theatrical recap of part of Season 3, no new content.
